Polar Espresso
Nestled atop a high mountain, 1,400-1,500 metres above sea level, Finca España is filled with plenty of native trees, providing shade for the coffee and helping nourish the soils of the farm. The air is moist, and the rich vegetation creates an ideal environment to grow high-quality coffee. All coffee from the farm is carefully harvested by hand and meticulously sorted before being delivered for processing to the nearby Beneficio El Carmen, where the cherries are sorted and sealed in plastic containers with no oxygen, to ferment for 192 hours with a mixture of microorganisms. Once fermentation is complete, the cherries are evenly dispersed on raised beds for 22 to 27 days, to dry in the open sun, with regular movement to prevent any mould growth.

About El Salvador
During the 70s and 80s, most Central American coffee growing countries were introducing experimental, high yielding coffee varieties to increase their output, but owing to civil war, this innovation passed El Salvador by, leaving the country with a majority crop of heirloom varieties of Bourbon, which are no longer grown on a large scale elsewhere. These coffees, harvested from October to March, are noted for their amazing sweetness and balance, and are becoming highly sought after once more.
