Colombia La Mariposa EA Decaf
We sourced this decat through Mercanta and their partner in Colombia, Cóndor. It is a mix of coffees from smallholder farms in Cauca, Nariño, Huila, Tolima Colombia, where Cóndor has been working for over 35 years, connecting producers with markets and assisting with processing. These producers maintain farms roughly three hectares in size. After the harvest, the coffee was processed at each farm. Producers will typically dry their coffee in the open sun on rooftops, under canopies or in greenhouses. The dried lots were then delivered to the dry mill in Popayan to be hulled and blended. EA Decaffeination Process: This regional lot then underwent the Ethyl Acetate decaffeination process in Colombia, also known as the Sugarcane Decaf or Natural Decaf Process. See below for more information about this 100% natural process that preserves the high quality of the green beans, while removing the caffeine content. The coffee did not need to leave its origin to undergo decaffeination - a truly sustainable method.

About Ethyl Acetate Process
Ethyl acetate, which occurs naturally in fruit, can selectively bond with caffeine, making it an excellent, natural solvent for decaffeination. Sugars from sugarcane are fermented to create ethyl alcohol, which is combined with acetic acid to create ethyl acetate. Green coffee beans are then repeatedly washed with ethyl acetate at low temperatures, to remove 97% of the caffeine, whilst maintaining the inherent flavour and quality of the coffee.

Mountainous and fertile, it has multiple tropical microclimates which result in incredibly diverse, quality coffee harvested from October to February, with a second, fly crop several months later, varying by region and microclimate.

There is a huge variety of coffee produced in Colombia, but the country’s coffee is generally associated with tasting notes of chocolate, nut and a moderate, citrusy acidity.
